Farmers Market Salad

Ingredients: Fresh Spinach and Assorted Lettuces washed and torn into bite size pieces 1 large Fresh tomato chopped or handful of small grape tomatoes 2 lg radishes chopped 2 or 3 green onions chopped 2 cucumbers sliced strawberries chopped handful of walnuts chopped fresh goat cheese crumbled salt& pepper to taste olive oil or Italian vinegarette drizzled over top

Directions: Step 1-Farmer's Market Salad In a large salad bowl combine your fresh spinach and a variety of lettuce washed and torn into bite size pieces, radishes, green onions, fresh tomatoes, cucumbers, Fresh strawberries (as many as you like), (but save some for your cereal in the mornings), fresh goat cheese crumbled over top, then a handful of nuts chopped and thrown over the top (I prefer walnuts or almonds, but pecans would be good too) A little pinch of sea salt, and a little cracked black pepper. Then a good Italian vinagerette or just some Olive oil drizzled over the top finishes off this great Farmer's Market Salad.

Swiss Chard Saute

Ingredients: Large bunch swiss chard, 2 tbsp. water, 1 small clove garlic sliced, 2 tbsp. olive oil, 1tsp butter,    salt, pinch of crushed red pepper

Directions:
Rinse out the swiss chard leaves thoroughly. Remove the toughest third of the stalk, discard or save for another recipe. Roughly chop the leaves into inch-wide strips. Heat a saucepan on a medium heat setting, add olive oil, a few small slices of garlic and the crushed red pepper. Saute for 1 minute. Add the chopped swiss chard leaves. Cover. Check after 5 minutes. If it looks dry, add a couple tbsp. water. Flip the leaves over in the pan. Cover again. Check for doneness in another 5 minutes. Add salt to taste and a small amount of butter.

Zucchini Bread

Ingredients

  • 2 cups grated zucchini
  • 3/4 cup egg substitute
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons baking soda
  • 1 tablespoon ground cinnamon
  • 2 teaspoons ground nutmeg
  • 1 teaspoon baking powder

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 2 - 8x4 inch loaf pans.
  2. In a large mixing bowl, combine zucchini, egg substitute, sugar, vegetable oil, and vanilla extract.
  3. In a medium size mixing bowl, mix together flour, salt, baking soda, cinnamon, nutmeg, and baking powder. Gradually mix dry ingredients into the zucchini mixture. Pour batter into the prepared loaf pans.
  4. Bake for 40 to 60 minutes.
